BEEF STIR FRY


BEEF STIR FRY

 

Prepare vegetables and cook rice.
In a large wok over high heat, stir fry 2 to 3 minutes:
 
1 lb [450g] sirloin steak, cut in narrow strips
Push steak up sides of pan (or remove) to stir fry:
 
2 cloves garlic, minced
1 tbsp ginger root, finely chopped
2 cups broccoli florets, OR
1 cup snow peas, trimmed
½ cup red pepper, cut in strips
½ cup green pepper, cut in strips
3-4 green onions, sliced
In a prep bowl, whisk together:
 
½ cup beef stock
1/3 cup Hoisin sauce
1 tbsp cornstarch
1 tbsp vegetable oil
1 tbsp vinegar
1 tsp dry mustard
 
Pour sauce over vegetables, add meat, and cook stirring for 2 to 3 minutes until sauce thickens.
Serve immediately with (or over) rice.
