GARLIC-CILANTRO
SKILLET-GRILLED PORK TENDERLOIN
Marinate
overnight:

1½
lbs pork tenderloin, cut crosswise inot one inch pieces and flattened
slightly with a kitchen mallet

Marinade:
|
|
Whisk
together:
|
4
cloves garlic, peeled and minced
¼
cup olive oil
½ cup
fresh cilantro, chopped
3
tbsp freshly squeezed lime juice
freshly
ground black pepper

Place
the pork in a covered glass dish and pour the marinade over the pork.
|
|
TO
COOK: remove the pork from marinade and discard the marinade. In a heavy
skillet over medium heat, pan-broil the pork 2 to 3 minutes per side. Serve
immediately.
